Vegan Roasted Vegetable Hummus Sandwich

Ingredients

Roasted vegetables

  • 1 zucchini
  • 1 yellow bell pepper
  • 1 red onion
  • 1 eggplant
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Sandwich base

  • 4 slices of whole grain bread
  • 1/2 cup hummus

Fresh toppings

  • 1/4 cup fresh basil leaves
  • 1/4 cup sprouts
  • 1/4 cup sliced cucumbers
  • 1/4 cup sliced tomatoes

Preparation

  1. Preheat oven to 400°F (200°C)

  2. Slice zucchini, yellow bell pepper, red onion, and eggplant into even pieces

  3. Toss vegetables with olive oil, salt, and pepper

  4. Roast on a baking sheet for 20-30 minutes until tender and slightly browned

  5. Spread hummus on two slices of bread

  6. Layer roasted vegetables on the hummus

  7. Top with fresh basil, sprouts, cucumber, and tomato slices

  8. Cover with remaining bread slices
