Indonesian Shrimp Paste Sambal

Ingredients

  • 1 tablespoon roasted shrimp paste
  • A handful of bird's eye chilies
  • 5 curly chilies
  • 5 cloves garlic
  • 3 shallots
  • 1 tomato, seeds removed
  • 3 key limes
  • Sugar
  • A little salt

Preparation

  1. Fry the chilies, garlic, shallots, and tomato until wilted.

  2. Then pound them, adding the roasted shrimp paste, sugar, and a little salt.

  3. Pound until even, squeeze in the key lime juice, taste and adjust seasoning if necessary.

Tips

  1. Serve with fried meatballs and plenty of rice.
