Spicy Indonesian Eggplant Sambal

Ingredients

  • 2 eggplants
  • 7 red curly chilies
  • 30 green bird's eye chilies
  • 6 shallots
  • 3 garlic cloves
  • 1 large tomato
  • approximately 3 teaspoons salt
  • 1/2 teaspoon powdered stock
  • 1.5 teaspoons fried shrimp paste
  • 2 finger-sized pieces palm sugar

Preparation

  1. Peel the eggplant sparingly, wash it clean, and fry until cooked. Set aside.

  2. Prepare the other ingredients: chilies, shallots, garlic, and tomato. Wash them clean, then fry until wilted, and drain.

  3. Mash the fried chili mixture, add salt, stock powder, shrimp paste, and palm sugar. Mash until smooth and taste to adjust seasoning.

  4. Serve with the fried eggplant and enjoy with warm rice.

Tips

  1. Use green bird's eye chilies for a vibrant green color if red chilies are expensive or unavailable.
