Homemade Indonesian Beef Floss
Ingredients
- 500g beef
Ground spices
- 1 tablespoon roasted coriander
- 6 shallots
- 4 garlic cloves
- 2 cm turmeric
- thumb-sized galangal
Additional
- 50g palm sugar
- 2 bay leaves
- 1 kaffir lime leaf
- salt to taste
- 1/2 cup thick coconut milk
- water as needed
Preparation
Boil the beef until tender, then shred and pound it.
Grind the spices finely and sauté until fragrant.
Add bay leaves and kaffir lime leaf, then add water.
Crush the palm sugar and add it to the spice mixture.
Add the beef, stir well, then add coconut milk and salt.
Cook continuously on low heat until the water evaporates and the beef is brownish and crispy.
