Roast Veg Sauce and Pasta

Ingredients

  • 10 large tomatoes ?3 red peppers ?1 onion ?4 cloves garlic ?3 tablespoons olive oil ? Salt and pepper

Preparation

  1. Preheat oven to 165C ?Chop all the vegetables and put them on a baking tray ?Drizzle the oil on top and mix through the veg ?Bake for around 3 hours giving it a stir a few times ?When cool enough blitz it till smooth

  2. If it looks too thick, add a little water ? Season with salt and pepper

  3. It really is as simple as that
