Vegan Taco Pasta Bowl

Ingredients

  • Gluten-free rigatoni
  • 1 cup pasta sauce (or salsa)
  • 3/4 cup vegan queso (or any queso dip)
  • Avocado
  • Tomatoes
  • Scallions
  • Cilantro
  • Kale
  • Hemp seeds

Preparation

  1. Cook the gluten-free rigatoni according to package instructions

  2. Prepare the sauce by mixing 1 cup pasta sauce and 3/4 cup vegan queso in a pan

  3. Combine the cooked pasta with the sauce

  4. Top with chopped avocado, tomatoes, scallions, cilantro, kale, and sprinkle with hemp seeds
