Ingredients
- Gluten-free rigatoni
- 1 cup pasta sauce (or salsa)
- 3/4 cup vegan queso (or any queso dip)
- Avocado
- Tomatoes
- Scallions
- Cilantro
- Kale
- Hemp seeds
Preparation
Cook the gluten-free rigatoni according to package instructions
Prepare the sauce by mixing 1 cup pasta sauce and 3/4 cup vegan queso in a pan
Combine the cooked pasta with the sauce
Top with chopped avocado, tomatoes, scallions, cilantro, kale, and sprinkle with hemp seeds
