Air Fried Paleo Coconut Shrimp

Ingredients

  • 1 pound shrimp, medium sized, deveined, uncooked
  • 2 cups unsweetened coconut flakes
  • 2 eggs
  • 1/2 cup coconut flour
  • Sea salt

Dipping sauce

  • coconut aminos
  • red pepper flakes

Preparation

  1. Prepare bowls and plates: whisk 2 eggs in a shallow bowl, pour coconut flour into another shallow bowl, and place coconut flakes on a plate.

  2. Peel, wash, and pat dry the shrimp.

  3. Dip each shrimp first in coconut flour, then in the egg, and finally in coconut flakes.

  4. Lay the coated shrimp on a plate and repeat for all shrimp.

  5. Sprinkle with sea salt if desired.

  6. Bake in air fryer at 365°F for 7 minutes per batch; multiple batches may be needed, taking about 15 minutes total for two batches.

  7. Serve with a mixture of coconut aminos and red pepper flakes.
