Air Fried Paleo Coconut Shrimp
Ingredients
- 1 pound shrimp, medium sized, deveined, uncooked
- 2 cups unsweetened coconut flakes
- 2 eggs
- 1/2 cup coconut flour
- Sea salt
Dipping sauce
- coconut aminos
- red pepper flakes
Preparation
Prepare bowls and plates: whisk 2 eggs in a shallow bowl, pour coconut flour into another shallow bowl, and place coconut flakes on a plate.
Peel, wash, and pat dry the shrimp.
Dip each shrimp first in coconut flour, then in the egg, and finally in coconut flakes.
Lay the coated shrimp on a plate and repeat for all shrimp.
Sprinkle with sea salt if desired.
Bake in air fryer at 365°F for 7 minutes per batch; multiple batches may be needed, taking about 15 minutes total for two batches.
Serve with a mixture of coconut aminos and red pepper flakes.
