Easy Shrimp with Cauliflower Gnocchi and Kale

Ingredients

  • Shrimp
  • Olive oil
  • Coconut aminos (a few tablespoons)
  • Kale
  • Cauliflower gnocchi (leftover or pre-cooked)
  • Pesto

Preparation

  1. Cook shrimp in olive oil over low-medium heat for 10 minutes, sprinkled with a few tablespoons of coconut aminos.

  2. Sauté kale in a pan until wilted

  3. Heat leftover cauliflower gnocchi and add pesto after cooking to avoid sogginess
