Cauliflower Gnocchi Sausage Kale Mushrooms Skillet

Ingredients

  • 1 bag cauliflower gnocchi
  • 1/2 onion
  • 3-4 baby portobello mushrooms
  • olive oil
  • 3 sausage links
  • 1 tsp onion powder
  • salt
  • 1/2 tsp Chipotle powder
  • kale

Preparation

  1. Heat a skillet over medium heat.

  2. Thaw 1 bag of cauliflower gnocchi in the microwave or by boiling.

  3. Cut up 1/2 onion and 3-4 baby portobello mushrooms, add to the skillet with a little olive oil.

  4. Cook for 3-4 minutes.

  5. Add a little more oil, the gnocchi, and 3 cut up sausage links.

  6. Sprinkle with 1 tsp onion powder, a sprinkle of salt, and 1/2 tsp Chipotle powder.

  7. Cook for 5-6 minutes, stirring occasionally, then add the kale and cook until it is wilted.

  8. Enjoy!
