Black Rice Penne Tuna Salad

Ingredients

  • 160 g black rice penne
  • 1 package of La Primavera Maruzzella salad (tuna, corn, peas, carrots, red peppers, black olives)
  • 2 ripe tomatoes
  • Arugula leaves
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste

Preparation

  1. Cook the black rice penne in salted water for the indicated time, then drain and rinse immediately under cold water to stop the cooking.

  2. Transfer to a large bowl and mix with the entire package of La Primavera Maruzzella salad.

  3. Add the tomato wedges, a few arugula leaves, a pinch of salt, a grind of black pepper, and a drizzle of extra virgin olive oil.

  4. Gently mix and let rest for at least 10 minutes. Serve cold.
