Octopus Salad with Potatoes

Ingredients

  • 1 kg octopus
  • 1 kg potatoes
  • 160 g extra virgin olive oil
  • 1/2 lemon
  • 20 g fresh parsley
  • salt
  • pepper

Preparation

  1. Boil the octopus in salted water until tender

  2. Boil the potatoes until cooked through

  3. Cool both the octopus and potatoes, then cut into bite-sized pieces

  4. Mix together the octopus, potatoes, olive oil, lemon juice, chopped parsley, salt, and pepper

  5. Serve chilled or at room temperature
