Octopus Salad with Potatoes
Ingredients
- 1 kg octopus
- 1 kg potatoes
- 160 g extra virgin olive oil
- 1/2 lemon
- 20 g fresh parsley
- salt
- pepper
Preparation
Boil the octopus in salted water until tender
Boil the potatoes until cooked through
Cool both the octopus and potatoes, then cut into bite-sized pieces
Mix together the octopus, potatoes, olive oil, lemon juice, chopped parsley, salt, and pepper
Serve chilled or at room temperature
