Salmon Cauliflower Fried Rice

Ingredients

  • Bag of frozen cauliflower rice
  • 3 large carrots
  • 2-3 heads broccoli
  • ~3/4 cup frozen shelled edamame
  • 2 eggs
  • Coconut aminos to taste
  • Salt to taste
  • Pepper to taste
  • Garlic to taste
  • Red pepper to taste
  • Salmon

Preparation

  1. Chop carrots and broccoli into small pieces

  2. Cook the frozen cauliflower rice according to package instructions or in a skillet until tender

  3. In a large pan, heat oil and sauté the chopped vegetables until soft

  4. Add edamame, coconut aminos, salt, pepper, garlic, and red pepper to the pan and stir to combine

  5. Push vegetables to one side, add eggs, scramble them, and mix everything together

  6. In a separate pan, heat oil and pan-sear the salmon until crispy and cooked through

  7. Serve the cauliflower fried rice topped with the pan-seared salmon
