Salmon Cauliflower Fried Rice
Ingredients
- Bag of frozen cauliflower rice
- 3 large carrots
- 2-3 heads broccoli
- ~3/4 cup frozen shelled edamame
- 2 eggs
- salmon
Seasonings
- coconut aminos to taste
- salt to taste
- pepper to taste
- garlic to taste
- red pepper to taste
Preparation
Sear the salmon in avocado oil over medium-low heat for 6-9 minutes per side, depending on thickness.
Heat a pan with oil.
Sauté carrots, broccoli, and edamame until tender.
Add frozen cauliflower rice and cook until heated through.
Push ingredients to one side, add eggs, and scramble.
Mix everything together and season with coconut aminos, salt, pepper, garlic, and red pepper to taste.
Serve the cauliflower fried rice with the pan-seared salmon.
