Protein Packed Berry Smoothie Bowl with Granola
Ingredients
Smoothie bowl
- 1 frozen banana
- 1/2 cup frozen blueberries
- 1/2 coconut milk yoghurt
- 1 heaped tbsp almond butter
- 1 Tbsp coconut flakes
- 1 Tbsp hemp seeds
- 2 cauliflower florets
- 1 Tbsp chia seeds
- 1 tsp MCT oil
- 1 tsp cinnamon
- 2 scoops vanilla protein
- 1/2 cup almond milk
- Handful ice cubes
Granola
- 1 cup GF rolled oats
- 1 tsp turmeric
- 1 tsp cinnamon
- 1/4 cup pumpkin seeds
- 1/2 cup pecans
- 1/4 cup walnuts
- 1/4 cup sesame seeds
- Pinch of himalayan salt
- 3 Tbsp coconut oil
- 2 Tbsp date syrup
- 1 Tbsp almond butter
- 4 medjool dates diced
Preparation
Preheat the oven to 180°C.
Place the coconut oil, date syrup and almond butter in a saucepan over medium heat and mix to combine.
Mix all the dry ingredients in a large mixing bowl.
Pour in the oil mixture and combine to coat well.
Place on a parchment lined baking tray and distribute.
Bake for about 20 minutes, giving the tray a good shake halfway.
Allow to cool on the baking tray and store in a large glass jar.
Blend all smoothie bowl ingredients until smooth.
Pour the smoothie into a bowl and top with the granola.
