Protein Packed Berry Smoothie Bowl with Granola

Ingredients

Smoothie bowl

  • 1 frozen banana
  • 1/2 cup frozen blueberries
  • 1/2 coconut milk yoghurt
  • 1 heaped tbsp almond butter
  • 1 Tbsp coconut flakes
  • 1 Tbsp hemp seeds
  • 2 cauliflower florets
  • 1 Tbsp chia seeds
  • 1 tsp MCT oil
  • 1 tsp cinnamon
  • 2 scoops vanilla protein
  • 1/2 cup almond milk
  • Handful ice cubes

Granola

  • 1 cup GF rolled oats
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1/4 cup pumpkin seeds
  • 1/2 cup pecans
  • 1/4 cup walnuts
  • 1/4 cup sesame seeds
  • Pinch of himalayan salt
  • 3 Tbsp coconut oil
  • 2 Tbsp date syrup
  • 1 Tbsp almond butter
  • 4 medjool dates diced

Preparation

  1. Preheat the oven to 180°C.

  2. Place the coconut oil, date syrup and almond butter in a saucepan over medium heat and mix to combine.

  3. Mix all the dry ingredients in a large mixing bowl.

  4. Pour in the oil mixture and combine to coat well.

  5. Place on a parchment lined baking tray and distribute.

  6. Bake for about 20 minutes, giving the tray a good shake halfway.

  7. Allow to cool on the baking tray and store in a large glass jar.

  8. Blend all smoothie bowl ingredients until smooth.

  9. Pour the smoothie into a bowl and top with the granola.
