Homemade Grain-Free Chocolate Granola with Nuts
Ingredients
- 1/2 cup chopped walnuts (or nuts of choice)
- 1/2 cup hemp seeds
- 1/2 cup pumpkin seeds
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 1 cup coconut flakes
- 1/4 cup cacao powder
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/2 tsp salt
- 2 tbsp coconut oil (or runny nut/seed butter)
- 1/4 cup molasses (or any liquid sweetener)
Preparation
Combine the nuts, seeds, coconut, salt, cinnamon, vanilla, and cacao powder in a large bowl. Stir to evenly coat.
Add the molasses and coconut oil or nut/seed butter. Mix until evenly coated and clumpy (hands work best, especially if using the nut/seed butter).
Spread on a baking sheet lined with parchment paper.
Bake for 10 minutes at 325F.
Stir, then bake for an additional 5-8 minutes, watching the edges carefully to avoid burning.
Cool completely before removing from the pan for best clusters.
Store in an airtight container in the fridge for 1-2 weeks. I like it best chilled!
Tips
Coconut flakes turn into some sort of cocoa-coated crispy magic when toasted and are the best part, so add lots.
Disregard the above if you hate coconut. This granola is very versatile; use your favorite nuts and seeds and add-ins!
