Homemade Grain-Free Chocolate Granola with Nuts

Ingredients

  • 1/2 cup chopped walnuts (or nuts of choice)
  • 1/2 cup hemp seeds
  • 1/2 cup pumpkin seeds
  • 1/4 cup flax seeds
  • 1/4 cup chia seeds
  • 1 cup coconut flakes
  • 1/4 cup cacao powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 tbsp coconut oil (or runny nut/seed butter)
  • 1/4 cup molasses (or any liquid sweetener)

Preparation

  1. Combine the nuts, seeds, coconut, salt, cinnamon, vanilla, and cacao powder in a large bowl. Stir to evenly coat.

  2. Add the molasses and coconut oil or nut/seed butter. Mix until evenly coated and clumpy (hands work best, especially if using the nut/seed butter).

  3. Spread on a baking sheet lined with parchment paper.

  4. Bake for 10 minutes at 325F.

  5. Stir, then bake for an additional 5-8 minutes, watching the edges carefully to avoid burning.

  6. Cool completely before removing from the pan for best clusters.

  7. Store in an airtight container in the fridge for 1-2 weeks. I like it best chilled!

Tips

  1. Coconut flakes turn into some sort of cocoa-coated crispy magic when toasted and are the best part, so add lots.

  2. Disregard the above if you hate coconut. This granola is very versatile; use your favorite nuts and seeds and add-ins!
