So Buckwheat Chocolate Breakfast Pudding

Ingredients

  • ➤1/2 cup raw buckwheat
  • ➤1-2 tbsp maple syrup (or 2 medjool dates)
  • ➤2-3 tbsp cocoa powder
  • ➤1/4 tsp salt
  • ➤1/2 tsp cinnamon (optional)
  • ➤~1/2 cup canned coconut milk

Preparation

  1. Soak the buckwheat overnight

  2. Drain and rinse thoroughly

  3. Blend everything until smooth, adding coconut milk as needed

  4. Serve warm, or chill to thicken

  5. Add toppings of choice and eat
