Creamy Mango Chiapudding

Ingredients

  • Fresh Mangoes - 2 medium size Ripe
  • If not then Tin of Mango pulp from any Indian store can be Handy . That's what I have used in this Recipe . 1 cup ? Chiaseeds - 1/2 cup ? Coconut milk - 2 cups
  • Coconut cream - 1/4 cup
  • Maple syrup / Raw agave - 2 tbsp

Preparation

  1. If using fresh mangoes then take the flesh out , chop into small pieces and add the flesh to the blender and process into a puree , but in my case I used Tin one so that was easy . I always keep this tin in my kitchen handy when we don't have fresh mangoes in season

  2. Add chiaseeds, coconut milk , maple syrup and pureed mango to a bowl and mix well until combined and chiaseeds gets mixed and fluffy

  3. Mix tiny bit of mango puree to coconut cream and mix well , leave into fridge until you layer it

  4. Make sure you keep chiapudding in the fridge for about 15 to 20 minutes unless you are in a super hurry. Before layering make sure you give a another mix and then start layering . ? Take a glass start layering your breakfast as you see in the picture

  5. Chiaseeds layer , coconut cream layer then mango puree with fresh fruits

  6. Last top layer I added mango puree you can also add chopped fresh mangoes with some toasted almonds to give a crunchy flavour ? If you don't like coconut you can add soy milk ? Serve and enjoy
