Overnight Chocolate Buckwheat Breakfast Pudding
Ingredients
- 1/2 cup buckwheat
- 1-2 tbsp maple syrup or 2 pitted medjool dates
- 2-3 tbsp cocoa powder
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
- ~1/2 cup canned coconut milk
Paleo option
- 1/4 cup walnuts
- 2 tbsp chia seeds
- 2 tbsp hemp seeds
Preparation
Soak the buckwheat or paleo option ingredients overnight.
Drain and rinse thoroughly.
Blend everything in the HUROM Hexa Power High Speed Blender until smooth, adding coconut milk as needed.
Serve warm or chill to thicken.
Top with berries, coconut whipped cream, cacao nibs, etc. Enjoy!
