Vegan Energy Balls with Walnuts and Dates
Ingredients
- 300g Dates without the inner stone
- 200g walnuts
- 40g almond butter
- 5g Chia seeds
- Pinch of salt
- 1 teaspoon cinnamon (optional)
- 2 Tablespoons maple syrup
- 40g coconut shreds or desiccated coconut
Preparation
Put all ingredients except the coconut shreds into a high speed blender or food processor and blend until you get a good oily consistency.
Form bite-sized balls from the dough.
Roll the balls in desiccated coconut until completely covered.
Freeze for a few hours for better texture, if desired.
If dates are too hard to blend, soak them in hot water for 30 minutes to soften up.
