Vegan Energy Balls with Walnuts and Dates

Ingredients

  • 300g Dates without the inner stone
  • 200g walnuts
  • 40g almond butter
  • 5g Chia seeds
  • Pinch of salt
  • 1 teaspoon cinnamon (optional)
  • 2 Tablespoons maple syrup
  • 40g coconut shreds or desiccated coconut

Preparation

  1. Put all ingredients except the coconut shreds into a high speed blender or food processor and blend until you get a good oily consistency.

  2. Form bite-sized balls from the dough.

  3. Roll the balls in desiccated coconut until completely covered.

  4. Freeze for a few hours for better texture, if desired.

  5. If dates are too hard to blend, soak them in hot water for 30 minutes to soften up.
