Pea and Mint Soup

Ingredients

  • 750 g frozen peas
  • 30 g fresh mint
  • 2 shallots
  • 3 garlic cloves
  • 1.2 l vegetable broth
  • 1 tsp apple vinegar
  • olive oil
  • salt and fresh ground pepper

Preparation

  1. Sauté finely chopped shallots in a large pot with olive oil

  2. Add 1 minced garlic clove and one-third of the chopped mint and sauté for a few minutes

  3. Add frozen peas, stir and pour in the vegetable broth and let it simmer until peas are soft, about 5-10 minutes

  4. Add the remaining 2 whole garlic cloves and the rest of the mint, reserving a few leaves for garnish, then add salt, pepper, and apple vinegar and use an immersion blender to blend the soup

  5. Add more salt and pepper if needed and serve the soup with a bit of cream, either classic or plant-based

Tips

  1. Top the soup with crispy croutons and coconut cream for added texture and flavor
