Homemade Spinach Dumplings with Fillings

Ingredients

  • 250 grams plain flour (plus extra for dusting)
  • 125 grams water
  • 50 grams chopped fresh or frozen spinach (optional)
  • 1/4 teaspoon salt

Filling suggestions

  • Red cabbage
  • Mushrooms
  • Spinach
  • Any vegetables
  • Frozen vegetables such as sweetcorn, peas, edamame, broccoli
  • Prawns
  • Chicken

Preparation

  1. Defrost spinach in the microwave if using frozen, mix with water, bring to a boil for a few minutes until fully cooked, and blend to a puree

  2. Add 150 ml of the boiling water mixture to the flour and salt, and mix well

  3. Once cooled slightly, use hands to form a dough

  4. Knead the dough well and set aside for 1 hour or freeze for later use

  5. After resting, form about 30 small balls from the dough

  6. Roll each ball into a flat circle about 7 cm in diameter

  7. Fill with your choice of filling and seal by pinching and pleating

  8. Cook by steaming or pan-frying and steaming like gyoza
