Blue Chia Pudding with Butterfly Pea Powder

Ingredients

  • 4 Tbsp white chia seeds
  • 1/2 tsp butterfly pea powder
  • 1/2 tsp almond extract
  • 1 Tbsp maple syrup
  • 1 1/4 C cashew milk
  • Half a lemon
  • One blood orange

Preparation

  1. Stir or shake to combine all ingredients thoroughly.

  2. Refrigerate for at least 10 minutes and shake again to mix any settled ingredients.

  3. Optionally, let it sit overnight for better texture.

  4. Just before serving, squeeze half a lemon into the mixture to change the color, then add blood orange slices.
