Vegan Nourish Bowl with Baked Bbq Tofu

Ingredients

  • tofu
  • store-bought BBQ sauce
  • bulgur wheat
  • avocado
  • broccoli
  • tomatoes
  • grated carrot
  • vegan mayonnaise
  • cucumber
  • green lettuce

Preparation

  1. Cook bulgur wheat according to package instructions and let cool

  2. Preheat oven to 400°F (200°C)

  3. Cut tofu into cubes, toss with BBQ sauce, and bake for 20-25 minutes until crispy

  4. Chop broccoli into florets, dice tomatoes, and slice cucumber

  5. Dice avocado and mix grated carrot with vegan mayonnaise

  6. Assemble bowls by placing lettuce at the bottom, then bulgur, baked tofu, and arrange vegetables on top
