Easy Vegan Tofu and Asparagus Rice Bowl
Ingredients
- Basmati rice
- mushrooms
- tamari
- avocado
- asparagus
- tofu
Tofu sauce
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 3 tbsp water
- 1 tsp corn starch
Preparation
Cook basmati rice according to package instructions
Cook mushrooms in tamari until tender
Cook asparagus until tender-crisp
Air fry tofu at 200°C (390°F) for 5 minutes
In a non-stick pan, combine air-fried tofu with 2 tbsp tamari, 2 tbsp rice vinegar, 3 tbsp water, and 1 tsp corn starch. Cook over low-medium heat for 2-3 minutes until the sauce thickens
Assemble the bowl with rice, mushrooms, avocado, asparagus, and the sauced tofu
