Easy Vegan Tofu and Asparagus Rice Bowl

Ingredients

  • Basmati rice
  • mushrooms
  • tamari
  • avocado
  • asparagus
  • tofu

Tofu sauce

  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 3 tbsp water
  • 1 tsp corn starch

Preparation

  1. Cook basmati rice according to package instructions

  2. Cook mushrooms in tamari until tender

  3. Cook asparagus until tender-crisp

  4. Air fry tofu at 200°C (390°F) for 5 minutes

  5. In a non-stick pan, combine air-fried tofu with 2 tbsp tamari, 2 tbsp rice vinegar, 3 tbsp water, and 1 tsp corn starch. Cook over low-medium heat for 2-3 minutes until the sauce thickens

  6. Assemble the bowl with rice, mushrooms, avocado, asparagus, and the sauced tofu
