Mini Peanut Butter Cookie Sandwiches
Ingredients
Cookies
- 1 cup peanut butter
- 1 egg
- 1/2 cup coconut sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
Peanut butter filling
- 1/2 cup peanut butter
- 2 tablespoons coconut flour
- 1 tablespoon maple syrup or honey
Preparation
In a mixing bowl, add the egg and whisk then add in the rest of the cookie ingredients and mix well
Grease a cookie sheet
Roll the dough into mini balls and place on the sheet then flatten down a bit and repeat to make 20 mini cookies
Bake at 350°F for 12-14 minutes
Let cool completely
In a small bowl, make the peanut butter filling by mixing together all the ingredients then add to one of the flat sides of a cookie and place the other cookie on top and repeat for 10 cookie sandwiches
Tips
Store the cookie sandwiches on the counter for up to 3 days or in the fridge for 4-5 days
