Mini Peanut Butter Cookie Sandwiches

Ingredients

Cookies

  • 1 cup peanut butter
  • 1 egg
  • 1/2 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Peanut butter filling

  • 1/2 cup peanut butter
  • 2 tablespoons coconut flour
  • 1 tablespoon maple syrup or honey

Preparation

  1. In a mixing bowl, add the egg and whisk then add in the rest of the cookie ingredients and mix well

  2. Grease a cookie sheet

  3. Roll the dough into mini balls and place on the sheet then flatten down a bit and repeat to make 20 mini cookies

  4. Bake at 350°F for 12-14 minutes

  5. Let cool completely

  6. In a small bowl, make the peanut butter filling by mixing together all the ingredients then add to one of the flat sides of a cookie and place the other cookie on top and repeat for 10 cookie sandwiches

Tips

  1. Store the cookie sandwiches on the counter for up to 3 days or in the fridge for 4-5 days
