Refreshing Lemon Yogurt Baskets
Ingredients
- 100 ml lemon juice
- 1 tsp grated lemon zest
- 2 gelatin leaves
- 250 g Greek yogurt
- 50 g erythritol or xylitol
Preparation
Soak gelatin in cold water and squeeze out.
Heat lemon juice with sugar substitute and gelatin in a pot without boiling until everything is dissolved.
Stir the liquid into the Greek yogurt.
Fill into a baking dish or empty lemon baskets and refrigerate for at least 2 hours.
