Refreshing Lemon Yogurt Baskets

Ingredients

  • 100 ml lemon juice
  • 1 tsp grated lemon zest
  • 2 gelatin leaves
  • 250 g Greek yogurt
  • 50 g erythritol or xylitol

Preparation

  1. Soak gelatin in cold water and squeeze out.

  2. Heat lemon juice with sugar substitute and gelatin in a pot without boiling until everything is dissolved.

  3. Stir the liquid into the Greek yogurt.

  4. Fill into a baking dish or empty lemon baskets and refrigerate for at least 2 hours.
