Orange Pineapple Gelatin Mold

Ingredients

  • 2 large oranges
  • 1 can sliced pineapple
  • 2 tablespoons lemon juice
  • 1 packet green lime jelly
  • 1 cup soft cream cheese

Preparation

  1. Get a decorative mold with a hole in the middle and grease it lightly with oil spray.

  2. Peel the oranges, separate the segments, and carefully remove the outer skin while keeping the pulp intact.

  3. Place the peeled orange segments in the bottom of the mold and chill in the refrigerator or freezer for 30 minutes.

  4. Drain the pineapple and measure 1 cup of the syrup; reserve the pineapple pieces.

  5. In a medium saucepan, combine the pineapple syrup and lemon juice. Bring to a boil over medium heat, add the jelly, and stir until fully dissolved. Let the mixture cool for 10 minutes.

  6. In a blender, combine the jelly mixture and cream cheese; blend on medium speed until smooth. Add the pineapple pieces and do not blend further.

  7. Pour the mixture into the mold over the orange segments and refrigerate for 8 hours or overnight.

  8. Unmold onto a large serving plate and serve immediately.
