Baked Ginger Lime Tofu with Marinade
Ingredients
- 1 block extra firm tofu, drained, pressed and sliced
- 1/4 cup fresh lime juice (2-3 limes)
- 1/4 cup avocado oil, evoo or veggie broth (texture will be better on this one with oil, but feel free to sub!)
- 3 tbsp finely grated ginger root
- 2 tbsp tamari or coconut aminos
Preparation
Mix together lime juice, oil, ginger and tamari.
Marinate tofu in the sauce in a shallow dish for at least one hour (overnight if possible).
Preheat oven to 415°F.
Place tofu and marinade in oven safe baking dish or skillet.
Bake tofu for 25-30 minutes, turning once.
Spoon leftover marinade on top before serving.
