Baked Ginger Lime Tofu with Marinade

Ingredients

  • 1 block extra firm tofu, drained, pressed and sliced
  • 1/4 cup fresh lime juice (2-3 limes)
  • 1/4 cup avocado oil, evoo or veggie broth (texture will be better on this one with oil, but feel free to sub!)
  • 3 tbsp finely grated ginger root
  • 2 tbsp tamari or coconut aminos

Preparation

  1. Mix together lime juice, oil, ginger and tamari.

  2. Marinate tofu in the sauce in a shallow dish for at least one hour (overnight if possible).

  3. Preheat oven to 415°F.

  4. Place tofu and marinade in oven safe baking dish or skillet.

  5. Bake tofu for 25-30 minutes, turning once.

  6. Spoon leftover marinade on top before serving.
