Beetroot Orange Hummus
Ingredients
- 1 medium beet roasted
- 235 grams cooked chickpeas
- 2 tablespoons tahini
- black pepper as needed
- 1-2 cloves of garlic
- 1/2 a teaspoon ground cumin
- zest of an orange and juice from half of it
- spritz of lemon
- 2 tablespoons olive oil
- salt
Preparation
Wrap a beetroot and bake in a greaseproof paper with the skin on in a 180c oven for 45 minutes or until soft. Take the skin off should easily come off using hand
Blend it with the rest of the ingredients except olive oil until smooth. Finally emulsify with olive oil
Serve with a drizzle of olive oil on top.There are some marinated black olives, hemp seeds, supremed oranges, and dill
