Buffalo Tempeh Wings with Vegan Ranch Dressing

Ingredients

  • 1 8oz package of tempeh
  • 1 cup buffalo sauce
  • 1/4 cup tapioca or corn starch
  • 1/3 cup regular bread crumbs
  • 1/3 cup panko bread crumbs

Preparation

  1. Cut tempeh into 1/2 inch tempeh wings width wise

  2. In a medium bowl marinade tempeh wings in 1/2 cup buffalo sauce for at least 20 minutes

  3. Preheat oven to 400 degrees and line a baking sheet with parchment paper or a silicone baking sheet

  4. Set up your breading stations as follows: add tapioca or corn starch to a shallow bowl next to your marinating tempeh, add remaining 1/2 cup of buffalo sauce to a shallow bowl next to your starch, add both kinds of bread crumbs to a shallow bowl next to the buffalo sauce

  5. With one hand take a tempeh wing from the buffalo marinade and add it to the bowl of starch, turning until well coated

  6. Transfer coated tempeh wing to the bowl of extra buffalo sauce and toss quickly

  7. Then move the tempeh wing to the bread crumb mix and press the breading in well

  8. Place your breaded tempeh wing on your lined baking sheet, leaving room to make sure your wings are not touching

  9. Bake for 15 minutes

  10. Remove from oven, and flip over and bake for another 15 minutes

  11. Serve with vegan ranch dressing and an extra drizzle of buffalo if you like things hot
