Everything Bagel Tofu Tenders

Ingredients

  • one package extra firm tofu
  • 1/4 cup non dairy milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon tapioca starch or corn starch
  • 1/2 cup everything bagel seasoning
  • 1/2 cup panko bread crumbs
  • 1/4 cup whole wheat bread crumbs

Preparation

  1. Preheat the oven to 400 degrees

  2. Line a baking sheet with parchment paper or a slip at silicone baking sheet

  3. Drain, rinse and press the tofu

  4. Slice tofu in half lengthwise, then in half again

  5. Then slice into into 1/2” fingers

  6. In a shallow bowl whisk non dairy milk with nutritional yeast and starch

  7. In a second shallow bowl mix the everything bagel seasoning with both kinds of bread crumbs

  8. With one hand add each tofu finger first to almond milk mix, turning until well coated

  9. Transfer to bread crumb mix and with the other hand coat each tofu finger well

  10. Place on lined baking sheet, leaving room to make sure tofu fingers are not touching

  11. Bake for 30 minutes

  12. Remove from over and flip over

  13. Bake for another 15 minutes

  14. Serve + enjoy!
