Crispy Baked Potato Wedges with Fresh Guacamole

Ingredients

Guacamole

  • 5 ripe avocados
  • Juice of half a lime
  • 1 ripe tomato
  • 1 small shallot
  • 1/4 teaspoon salt
  • A small handful of cilantro
  • 1/16 teaspoon or more chilli flakes

Potato wedges

  • About 5 medium potatoes
  • 1 tablespoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon rosemary

Preparation

Guacamole

  1. Mash the avocados on a plate for easier handling.

  2. Squeeze the lime juice over the mashed avocados and mix well.

  3. Cube the tomato and finely chop the shallot.

  4. Combine all ingredients on the plate, including salt, cilantro, and chili flakes to taste.

Potato wedges method

  1. Cut the potatoes into wedges. Wash if organic, peel if not.

  2. Add to a bowl with paprika, garlic powder, salt, and rosemary.

  3. Mix all together with wet clean hands.

  4. Spread on a baking tray and bake at 190°C for 45 minutes.
