Crispy Halloumi Fritters with Carrots and Courgettes

Ingredients

  • 225g grated halloumi
  • 2 medium sized grated carrots
  • 2 small grated courgettes
  • 1/2 cup bread crumbs
  • 3 eggs
  • 1tsp salt
  • 1tsp black pepper
  • 1tsp smoked paprika
  • 1/4tsp chilli powder
  • 1 tbsp finely chopped spring onions
  • 1tbsp coconut oil

Preparation

  1. Grate the carrots, halloumi and courgettes

  2. In a bowl mix all the ingredients

  3. You will notice water being released so when you form your patties, squeeze them tight between your hands to remove excess water or add more breadcrumbs to absorb the water

  4. In a pan heat 1tbsp coconut oil

  5. Place your fritters on the hot oiled pan and let brown on both sides

  6. Serve with any sauce you like, a poached egg or salad
