Vegan Gluten-Free Chocolate Buckwheat Pancakes

Ingredients

  • 1 cup non-dairy milk (like almond or coconut)
  • 1 tbsp coconut olive oil
  • 1 tbsp flax meal
  • 3/4 cup buckwheat flour
  • 1/4 cup cassava flour (or add 1/4 buckwheat or spelt)
  • 1/4 cup cacao powder
  • 1/2 tsp baking powder
  • Cinnamon and nutmeg
  • For sweeter version add 1 tbsp maple, honey, or coconut sugar

Preparation

  1. In a large bowl mix milk, oil and flax and stir, let sit for 5 minutes.

  2. Add in flour(s), cacao, baking powder and stir until batter starts to thicken but is still liquidy.

  3. Lightly oil a skillet, use a large spoon to pour batter onto the skillet and flip once it starts to bubble (about 1-2 minutes). Repeat!

  4. Top with your favorites like coconut oil, vegan butter, syrup, chocolate chips, coconut, cacao nibs, hemp seeds, bee pollen, etc.
