Vegan Gluten-Free Chocolate Buckwheat Pancakes
Ingredients
- 1 cup non-dairy milk (like almond or coconut)
- 1 tbsp coconut olive oil
- 1 tbsp flax meal
- 3/4 cup buckwheat flour
- 1/4 cup cassava flour (or add 1/4 buckwheat or spelt)
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- Cinnamon and nutmeg
- For sweeter version add 1 tbsp maple, honey, or coconut sugar
Preparation
In a large bowl mix milk, oil and flax and stir, let sit for 5 minutes.
Add in flour(s), cacao, baking powder and stir until batter starts to thicken but is still liquidy.
Lightly oil a skillet, use a large spoon to pour batter onto the skillet and flip once it starts to bubble (about 1-2 minutes). Repeat!
Top with your favorites like coconut oil, vegan butter, syrup, chocolate chips, coconut, cacao nibs, hemp seeds, bee pollen, etc.
