Apple Spiced Scones
Ingredients
- 3 cups (blended into oat flour, measure out 2 1/2 cups of this flour for the recipe)
- 1/4 cup almond flour
- 1/4 cup coconut sugar + 1 tbsp reserved for sprinkling over top
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 6oz cup of plain soy yogurt
- 1/4 cup tahini or nut/seed butter of your choice
- 1/4 cup apple sauce
- 1 tbsp apple cider vinegar
- 1/4 cup chopped walnuts
- 1 small apple, diced
- 2 tbsp coconut milk
Preparation
Preheat oven to 400F
Add rolled oats to a food processor or high speed blender and blend until turned into a fine flour
Measure out 2 1/2 cups of the flour and add to a medium mixing bowl
Add in almond flour, sugar, baking powder, spice, and salt
Add in tahini and yogurt and mix together using the back of a fork to fully combine
Add in apple sauce and apple cider vinegar, and continue to mix together until a dough starts to form
