Apple Spiced Scones

Ingredients

  • 3 cups (blended into oat flour, measure out 2 1/2 cups of this flour for the recipe)
  • 1/4 cup almond flour
  • 1/4 cup coconut sugar + 1 tbsp reserved for sprinkling over top
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 6oz cup of plain soy yogurt
  • 1/4 cup tahini or nut/seed butter of your choice
  • 1/4 cup apple sauce
  • 1 tbsp apple cider vinegar
  • 1/4 cup chopped walnuts
  • 1 small apple, diced
  • 2 tbsp coconut milk

Preparation

  1. Preheat oven to 400F

  2. Add rolled oats to a food processor or high speed blender and blend until turned into a fine flour

  3. Measure out 2 1/2 cups of the flour and add to a medium mixing bowl

  4. Add in almond flour, sugar, baking powder, spice, and salt

  5. Add in tahini and yogurt and mix together using the back of a fork to fully combine

  6. Add in apple sauce and apple cider vinegar, and continue to mix together until a dough starts to form
