Banana Bread Pancakes with Chocolate Drizzle

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons whole grain flour
  • pinch of salt
  • pinch of baking powder (optional)

Toppings

  • peach or nectarine slices
  • dark chocolate
  • a little bit of milk

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg.

  3. Mix all the ingredients except for the garnishes to prepare the pancake batter.

  4. Heat a non-stick pan.

  5. Pour the batter using a spoon to form little pancakes; you can add a tiny amount of coconut oil if desired.

  6. Cook each side for 1-2 minutes until they turn golden-brown.

  7. After stacking the pancakes, add peach or nectarine slices.

  8. To make the chocolate drizzle, warm a tiny bit of milk in a microwave.

  9. Add chocolate pieces to the warm milk and stir until smooth.

  10. Pour the chocolate drizzle generously over the pancakes and enjoy.
