Crispy and Creamy Vegan French Toast

Ingredients

  • 1/2 cup soft Morinu tofu
  • 1 cup all-purpose flour
  • 1 1/4 cups Ripple foods milk
  • 3 tablespoons neutral oil (canola or coconut)
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • Bread (stale preferred)

Preparation

  1. Puree all ingredients in a blender

  2. Pour the mixture into a bowl or 8x8 pan

  3. Soak the bread in liquid

  4. Put on oiled griddle or frying pan

  5. Cook each side for 3-4 minutes until browned

  6. Serve with powdered sugar and fresh blueberries and strawberries
