Crispy and Creamy Vegan French Toast
Ingredients
- 1/2 cup soft Morinu tofu
- 1 cup all-purpose flour
- 1 1/4 cups Ripple foods milk
- 3 tablespoons neutral oil (canola or coconut)
- 3 tablespoons maple syrup
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- Bread (stale preferred)
Preparation
Puree all ingredients in a blender
Pour the mixture into a bowl or 8x8 pan
Soak the bread in liquid
Put on oiled griddle or frying pan
Cook each side for 3-4 minutes until browned
Serve with powdered sugar and fresh blueberries and strawberries
