Fluffy Banana Pancakes with Almond Milk
Ingredients
- 2 small ripe bananas
- 1 egg or flax egg
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 200ml almond milk
- 80g oat flour
- 60g buckwheat flour
- 60g almond flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp lemon juice
Preparation
In a large bowl, mash the banana.
Add the egg or flax egg and mix until fluffy.
Add maple syrup and coconut oil and mix again.
Pour the almond milk and stir until combined.
Add all dry ingredients to the wet mixture and mix shortly. Don’t over-whisk. The dough should have a creamy and thick consistency.
Cook over low heat until bubbles form, then flip and cook on the other side.
Add your favorite toppings and enjoy!
