Gluten-Free Dairy-Free Crepes

Ingredients

  • 1/2 cup gluten-free flour
  • 1/4 cup almond milk
  • 1/4 filtered water
  • 1 cage free egg
  • 1 tbsp ghee
  • pinch of salt
  • pinch of cinnamon

Fillings

  • blueberries
  • banana
  • freeze dried strawberries
  • almond butter
  • @kweenandco chocolate granola butter

Preparation

  1. In a bowl, whisk together all crepe ingredients to form a smooth batter.

  2. Heat a non-stick pan over medium heat and add a small amount of ghee.

  3. Pour a thin layer of batter into the pan, swirl to cover, and cook until lightly browned, then flip and cook the other side.

  4. Repeat with remaining batter to make multiple crepes.

  5. Fill each crepe with desired stuffers like fruits and nut butters.
