Spiced Carrot Cake Oats

Ingredients

  • 1/2 cup oats
  • almond milk
  • 1 tsp turmeric
  • ginger
  • cinnamon
  • maca powder
  • vanilla extract
  • a grated carrot
  • a handful of raisins
  • 1 tbsp desiccated coconut
  • walnuts
  • sunflower seeds
  • 1/2 mashed banana
  • a pinch of salt
  • 2 tbsp chia seeds
  • 125ml almond milk
  • 1 tsp vanilla extract
  • sliced banana
  • kefir yoghurt
  • almond butter
  • blueberries

Preparation

  1. Soak 1/2 cup oats overnight in almond milk with 1 tsp turmeric, ginger, cinnamon, maca powder, vanilla extract, a grated carrot, a handful of raisins, 1 tbsp desiccated coconut, walnuts, sunflower seeds, 1/2 mashed banana, and a pinch of salt.

  2. For the chia pudding, mix 2 tbsp chia seeds with 125ml almond milk and 1 tsp vanilla extract, and leave overnight.

  3. In the morning, add the chia pudding to the oat mixture and top with sliced banana, kefir yoghurt, almond butter, and blueberries.
