Spiced Carrot Cake Oats
Ingredients
- 1/2 cup oats
- almond milk
- 1 tsp turmeric
- ginger
- cinnamon
- maca powder
- vanilla extract
- a grated carrot
- a handful of raisins
- 1 tbsp desiccated coconut
- walnuts
- sunflower seeds
- 1/2 mashed banana
- a pinch of salt
- 2 tbsp chia seeds
- 125ml almond milk
- 1 tsp vanilla extract
- sliced banana
- kefir yoghurt
- almond butter
- blueberries
Preparation
Soak 1/2 cup oats overnight in almond milk with 1 tsp turmeric, ginger, cinnamon, maca powder, vanilla extract, a grated carrot, a handful of raisins, 1 tbsp desiccated coconut, walnuts, sunflower seeds, 1/2 mashed banana, and a pinch of salt.
For the chia pudding, mix 2 tbsp chia seeds with 125ml almond milk and 1 tsp vanilla extract, and leave overnight.
In the morning, add the chia pudding to the oat mixture and top with sliced banana, kefir yoghurt, almond butter, and blueberries.
