Carrot Cake Oats Bowl

Ingredients

  • 1/2 cup oats (I used organic quick oats)
  • 1 cup + 2 tbsp soy milk
  • 1 small carrot finely shredded
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • Sweetener to liking (I didn't use)
  • Zest of orange peel (about 1/8th of the orange peel)

Optional add-ins

  • goji berries
  • golden raisins
  • walnuts
  • creamer of choice, etc.

Preparation

  1. Mix all ingredients together.

  2. Microwave on high for about 90 seconds or refrigerate overnight and enjoy in the morning.

  3. If refrigerated, eat cold or warm in the microwave for about 1 minute and 40 seconds, ensuring the bowl can handle temperature changes without cracking.
