Quick Oatmeal with Berry Jam
Ingredients
Oatmeal
- 1/2 cup quick oats
- 1 tbsp ground flaxseeds
- Pinch of cardamom
- Pinch of cinnamon
- 1/2 tsp vanilla extract
- Pinch of salt
- 1 banana
- 1 cup unsweetened almond milk
Easy berry jam
- 1/2 cup frozen mixed berries
- 2 tsp chia seeds
- 1/2 tsp sweetener (optional)
Preparation
Optional: Use quick oats or process oats in a food processor for creaminess.
In a saucepan, add oats, banana, cinnamon, salt, flax seeds, and milk.
Bring to a simmer on low to medium heat and cook for 3 minutes until thickened. Remove from stove.
For the berry jam, in a microwave-safe dish, combine chia seeds, frozen mixed berries, and sweetener if desired.
Microwave the jam mixture for 1 minute and 30 seconds.
Stir and mash the berries, then let sit for 5-10 minutes to thicken.
Prepare the jam while cooking the oats or beforehand.
