Quick Oatmeal with Berry Jam

Ingredients

Oatmeal

  • 1/2 cup quick oats
  • 1 tbsp ground flaxseeds
  • Pinch of cardamom
  • Pinch of cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 banana
  • 1 cup unsweetened almond milk

Easy berry jam

  • 1/2 cup frozen mixed berries
  • 2 tsp chia seeds
  • 1/2 tsp sweetener (optional)

Preparation

  1. Optional: Use quick oats or process oats in a food processor for creaminess.

  2. In a saucepan, add oats, banana, cinnamon, salt, flax seeds, and milk.

  3. Bring to a simmer on low to medium heat and cook for 3 minutes until thickened. Remove from stove.

  4. For the berry jam, in a microwave-safe dish, combine chia seeds, frozen mixed berries, and sweetener if desired.

  5. Microwave the jam mixture for 1 minute and 30 seconds.

  6. Stir and mash the berries, then let sit for 5-10 minutes to thicken.

  7. Prepare the jam while cooking the oats or beforehand.
