Calming Oatmeal with Berry Jam

Ingredients

Oatmeal

  • 1/2 cup of quick oats
  • 1 tbsp ground flaxseeds
  • Pinch of cardamom
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 banana, sliced
  • 1 cup unsweetened almond milk

Berry jam

  • 1/2 cup frozen mixed berries
  • 2 tsp chia seeds
  • 1/2 tsp sweetener (optional, I like mine without)

Preparation

  1. Optional: To make oats creamy, use quick oats or process the oats yourself in a food processor.

  2. In a saucepan, add oats, banana, cinnamon, salt, flax seeds, and milk. Bring to a simmer on low to medium heat and allow to heat through and thicken for 3 minutes. Remove from stove.

  3. In a microwave safe dish, combine chia seeds, frozen mixed berries, and sweetener. Microwave for 1 minute and 30 seconds. Stir, mash, and allow to sit for 5-10 minutes to thicken. You can do this step while waiting for your oats to cook or before cooking your oats.
