Calming Oatmeal with Berry Jam
Ingredients
Oatmeal
- 1/2 cup of quick oats
- 1 tbsp ground flaxseeds
- Pinch of cardamom
- 1/2 tsp vanilla extract
- Pinch of salt
- 1 banana, sliced
- 1 cup unsweetened almond milk
Berry jam
- 1/2 cup frozen mixed berries
- 2 tsp chia seeds
- 1/2 tsp sweetener (optional, I like mine without)
Preparation
Optional: To make oats creamy, use quick oats or process the oats yourself in a food processor.
In a saucepan, add oats, banana, cinnamon, salt, flax seeds, and milk. Bring to a simmer on low to medium heat and allow to heat through and thicken for 3 minutes. Remove from stove.
In a microwave safe dish, combine chia seeds, frozen mixed berries, and sweetener. Microwave for 1 minute and 30 seconds. Stir, mash, and allow to sit for 5-10 minutes to thicken. You can do this step while waiting for your oats to cook or before cooking your oats.
