Carrot Cake Overnight Oats
Ingredients
- 1 cup oats
- 1 1/2 cups milk (dairy or non-dairy)
- 1 tbsp desiccated coconut
- 1 medium carrot, grated
- 2 tbsp maple syrup
- 2 tbsp raisins
- 1/2 tsp ground cinnamon
- 1 tsp ground mixed spice
- 1/2 tsp vanilla
- 2 tbsp chopped walnuts, plus extra to serve
Preparation
Place all ingredients in an airtight container and stir until well combined. Seal container and place in the fridge overnight.
Take out of the fridge in the morning and stir again. Serve with a sprinkle of chopped walnuts and extra raisins.
