Healthy Vegetable Tacos with Tahini Sauce
Ingredients
- 1 can chickpeas
- Sazon seasoning
- Salt
- Mushroom seasoning
- Greens
- Red cabbage
- Peppers
- Onions
- Sweet potatoes
- Mushrooms
- Corn tortillas
Tahini sauce
- 3 tablespoons tahini
- 2 teaspoons mustard
- Pinch of turmeric
- 2 teaspoons soy sauce
- 2 teaspoons maple syrup
- 2-3 tablespoons water
Preparation
Prepare chickpeas
Rinse and drain a can of chickpeas.
Dry with a towel.
Sprinkle with sazon seasoning, salt, and mushroom seasoning.
Bake at 400°F for 30 minutes until crispy or use an air fryer at 370°F for 15 minutes.
Make tahini sauce
Combine 3 tablespoons tahini, 2 teaspoons mustard, a pinch of turmeric, 2 teaspoons soy sauce, 2 teaspoons maple syrup, and 2-3 tablespoons water.
Whisk until smooth.
Assemble tacos
Grill peppers and onions until tender
Prepare greens, red cabbage, sweet potatoes, and mushrooms by chopping or cooking as preferred
Warm corn tortillas
Stuff the tortillas with the prepared fillings including chickpeas, vegetables, and other items.
Drizzle with the tahini sauce.
