Easy Marinated Tofu with Vegetables and Rice

Ingredients

  • 1 block tofu
  • 1 tbsp soy sauce
  • 2 tsp mustard
  • 1 tbsp nutritional yeast
  • 2 tbsp water

Veggie components

  • 1/2 cup sliced mushrooms
  • 1 cup raw broccoli florets
  • 2 tbsp water
  • 1/2 cup chopped asparagus
  • 1 tbsp soy sauce
  • 1 tsp garlic chili sauce
  • 1 tbsp tahini
  • salt
  • onion powder
  • garlic powder
  • ginger powder

Preparation

  1. Drain and press the tofu, then cut it into cubes.

  2. In a Tupperware container, mix soy sauce, mustard, nutritional yeast, and water together; set aside.

  3. Add the cubed tofu to the container with the marinade, seal it, and gently shake to coat the tofu completely.

  4. Cook the marinated tofu in the oven at 400F for 25 minutes or in the air fryer at 370F for 15 minutes.

  5. For the veggies, sauté 1/2 cup sliced mushrooms for about 3 minutes.

  6. Add 1 cup raw broccoli florets and 2 tbsp water, cover, and cook for 2-3 minutes or until broccoli is bright green.

  7. Add asparagus, then sauté for 2 minutes with a sprinkle of salt, onion powder, garlic powder, and ginger powder.

  8. Add 1 tbsp soy sauce, 1 tsp garlic chili sauce, and 1 tbsp tahini; toss and sauté for 5 minutes or until broccoli is fully cooked, then remove from heat.

  9. Pair the cooked tofu with brown basmati rice and the sautéed veggies and greens.
