Hearty Stewed Beans with Sazón and Veggies

Ingredients

  • 2 cans of beans (black and red kidney)
  • 1/2 medium red onion
  • 1/2 package of sliced mushrooms
  • 1 can fire roasted diced tomatoes
  • 2 tsp to 1 tbsp @eatloisa sazón
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • Handful of cilantro (optional)

Preparation

  1. In a pan, cook mushrooms and onions until onions soften, about 3 minutes.

  2. Add bell pepper, garlic, tomatoes and sazón. Stir to combine and heat up until fragrant, about five minutes.

  3. Add in beans, and allow to cook for about 10-15 minutes on low heat.

  4. Adjust seasonings as desired (if adding cilantro, add it in now so that heat of dish will naturally cook it down) and serve.
