Loaded Sweet Potato Breakfast with Bacon and Eggs

Ingredients

  • 1 egg
  • ghee
  • 1 sweet potato
  • plain yogurt
  • raspberries
  • gr8nola
  • blueberries
  • 2 pieces of no sugar added bacon
  • 1/2 avocado

Preparation

  1. Roast the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 40 minutes to caramelize.

  2. Fry 1 egg in ghee.

  3. Mash the raspberries.

  4. Top the sweet potato with plain yogurt, mashed raspberries, gr8nola, and blueberries.

  5. Add the fried egg, bacon, and avocado to assemble the meal.
