Loaded Sweet Potato Breakfast with Bacon and Eggs
Ingredients
- 1 egg
- ghee
- 1 sweet potato
- plain yogurt
- raspberries
- gr8nola
- blueberries
- 2 pieces of no sugar added bacon
- 1/2 avocado
Preparation
Roast the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 40 minutes to caramelize.
Fry 1 egg in ghee.
Mash the raspberries.
Top the sweet potato with plain yogurt, mashed raspberries, gr8nola, and blueberries.
Add the fried egg, bacon, and avocado to assemble the meal.
