Perfect Breakfast Trio with Sweet Potato Avocado Eggs
Ingredients
- 2 eggs
- ghee
- 1 sweet potato
- tomatoes
- 1/2 avocado
- red pepper flakes
Preparation
Bake the sweet potato at 400 degrees Fahrenheit for 45 minutes, optionally done the night before.
Mash the baked sweet potato.
Fry two eggs in ghee.
Cut the avocado and tomatoes.
Assemble the breakfast and sprinkle red pepper flakes on the avocado if desired.
Optionally, reheat the sweet potato before serving.
