Pasta with Hummus Tomato Sauce

Ingredients

  • 1/4 cup olive oil
  • 1 teaspoon oregano
  • 2 garlic cloves, minced
  • 6 oz can tomato paste
  • 2 large diced tomatoes
  • 2 cups pasta water
  • A few pinches of salt & pepper
  • 1 tbsp fresh basil
  • 1/2 cup hummus
  • 1 tsp sugar
  • Your choice of pasta

Preparation

  1. Cook pasta according to package instructions.

  2. In a saucepan, heat olive oil over medium heat. Add minced garlic and oregano, sauté until fragrant.

  3. Add tomato paste, diced tomatoes, pasta water, salt, pepper, and sugar. Bring to a simmer and cook until thickened.

  4. Stir in hummus and fresh basil.

  5. Combine the sauce with the cooked pasta and serve.
