Pasta with Hummus Tomato Sauce
Ingredients
- 1/4 cup olive oil
- 1 teaspoon oregano
- 2 garlic cloves, minced
- 6 oz can tomato paste
- 2 large diced tomatoes
- 2 cups pasta water
- A few pinches of salt & pepper
- 1 tbsp fresh basil
- 1/2 cup hummus
- 1 tsp sugar
- Your choice of pasta
Preparation
Cook pasta according to package instructions.
In a saucepan, heat olive oil over medium heat. Add minced garlic and oregano, sauté until fragrant.
Add tomato paste, diced tomatoes, pasta water, salt, pepper, and sugar. Bring to a simmer and cook until thickened.
Stir in hummus and fresh basil.
Combine the sauce with the cooked pasta and serve.
